Pelos menos 35 produtores atendidos pela Empresa de Assistência Técnica e Extensão Rural de Minas Gerais (Emater-MG) receberam medalhas no 3º Mundial do Queijo do Brasil, realizado no último final de semana, em São Paulo.
Uma das atrações do evento foi o Concurso de Queijos e Produtos Lácteos, que neste ano contou com aproximadamente 1,9 mil itens participantes, de 14 países. Foram premiados queijos, iogurtes, doces de leite e coalhadas. Os queijos dos produtores atendidos pela Emater-MG receberam medalhas nas categorias Super Ouro (três queijos), Ouro (nove queijos), Prata (10 queijos) e Bronze (13 queijos).
A seleção dos melhores queijos foi feita por 300 jurados. No total, 598 medalhas foram distribuídas. Os produtos foram pontuados após avaliação de itens como aroma, sabor, consistência e aparência. Os premiados com a categoria Bronze receberam entre 70 e 80 pontos. Na premiação Prata, ficaram os produtos que obtiveram entre 81 e 90 pontos. Em seguida, com 91 a 98 pontos, os produtores vencedores da medalha Ouro. Já os ganhadores da categoria Super Ouro, tiveram 99 e 100 pontos.
“O concurso mundial é muito importante. Os mineiros conquistando essas premiações, num concurso com 14 países, conseguem uma valorização muito grande e divulgam o produto de Minas”, explica Maria Edinice Rodrigues, coordenadora estadual de queijos artesanais da Emater-MG.
Ela afirma que o patamar atingido pelos produtores do estado é resultado de uma trabalho que começou com o reconhecimento da importância dos produtos artesanais do meio rural. “A Emater é pioneira, com o Governo de Minas Gerais, na publicação de uma lei que regulamenta os produtos artesanais. Trabalhamos ao longo dos últimos anos para os agricultores melhorarem a qualidade dos produtos. Desde a parte de melhoramento genético e qualidade do rebanho, até a parte de boas práticas dentro da queijaria, para oferecer seguro para o consumidor”, diz.
O 3º Mundial do Queijo do Brasil foi promovido pela SerTãoBras, associação de produtores de queijos artesanais criada há 16 anos e que reúne mais de 250 associados do Brasil. O evento contou com a parceria com a Guilde Internationale des Fromagers, uma das maiores associações de queijeiros do mundo.
Dinamarca e Minas
Um dos mineiros premiados no concurso foi o Laticínio Seritinga, localizado no município de mesmo nome, na Serra da Mantiqueira. O produtor Aurelio Vilela Arantes teve três queijos entre os medalhistas do evento. O destaque foi o Queijo Terroir da Seritinga, que recebeu a medalha Super Ouro.
A produção do Terroir da Seritinga une a tradição das técnicas trazidas por dinamarqueses, que chegaram à região em 1940, com as condições de clima, solo e vegetação da Serra da Mantiqueira. Além do queijo premiado como Super Ouro, o laticínio também investe na produção de queijos tipo Gouda e Emmental, nos queijos Minas Padrão, Meia Cura e Coalho. Muitos também já receberam premiações em outros concursos.
A produção é vendida para diversas partes do país. O laticínio processa 15 mil litros de leite por dia. Aurelio Arantes destaca o trabalho que a Emater-MG desenvolve junto aos produtores de queijo do estado.
“A Emater tem um trabalho ímpar em todo direcionamento da produção. Dando assistência desde o processo de alimentação do gado até a comercialização dos produtos. Se faz indispensável, principalmente aos pequenos produtores, pois conseguem uma assistência bastante especializada e sem custos”, afirma.
Casal de ouro
Do Campo das Vertentes, o queijo Lasquinha também foi premiado, com a medalha Ouro. Ele é um queijo Minas Artesanal, produzido na Fazenda da Saudade, em Ibertioga. Os responsáveis pela produção são o casal Tereza Rodrigues e Mateus Brandão. Ela, uma jornalista, e ele, publicitário.
Tereza Rodrigues conta que a produção de queijo começou em 2018, após deixarem a vida corrida que tinham em Brasília e se mudarem para a fazenda da família. Para chegar ao estágio atual de qualidade, foram vários cursos, visitas a outras queijarias e experimentações. Ela afirma que a assistência da Emater-MG foi fundamental neste processo.
“Desde quando começamos com a ideia do queijo, a Emater organizou visitas a outras queijarias pra gente ir conhecendo, ajudou a definir o local e a planta da nossa queijaria e até na compra dos equipamentos. Também indicou cursos. Ajudou muito mesmo”, lembra.
Hoje o casal processa 150 litros de leite diariamente para fazer o queijo em dois tamanhos, de 650 e 250 gramas. As vendas são feitas em Tiradentes, São João del-Rei, Belo Horizonte, Barbacena e Cataguases. Como a queijaria também possui o selo Sisbi, que permite a comercialização para todo o país, também vendem em São Paulo, Rio de Janeiro e para consumidores de outros estados que fazem os pedidos pela internet.
Com a premiação no 3º Mundial do Queijo do Brasil, eles vislumbram um novo horizonte. “Essa medalha de ouro vai melhorar muito a nossa visibilidade, porque muitos clientes buscam por queijos premiados. É a porta de entrada para novas parcerias”, comemora Tereza Rodrigues.
